The cuisine of Sifnos
One of the greatest secrets of Sifnian cuisine is cooking in clay pots in a wood-fired oven. The local clay is fire-resistant, which is why it has traditionally been used for making cookware.
Must-try dishes you shouldn't miss
Mastelo: The most iconic dish of Sifnos! Lamb or goat, washed only with local red wine, flavored with plenty of dill, and placed on vine twigs inside a special clay pot (mastelo) to be steamed in the wine’s vapor without touching the bottom of the pot. Traditionally, mastelo is cooked at Easter, but nowadays, you can find it in many restaurants all year round.
Revithada: The ultimate Sunday dish of Sifnos! It is slow-cooked overnight in a wood-fired oven inside a special clay pot called a "skepastaria." On Sunday morning, after church service, locals return home to enjoy this unique dish. During the summer months, you can find it served daily in restaurants. If you attend a religious feast in Sifnos, the first dish you will be served is revithada.
Revithokeftedes: Crispy, aromatic, and full of flavor! These chickpea fritters are made with coarsely ground chickpeas, herbs like marjoram, and fried until golden brown and delicious.
Capers Salad: A delicious spread made from capers and onions, slow-cooked together until they form a wonderfully aromatic and flavorful salad.
The cheeses of Sifnos:
- *Gylomeni Manoura*: A spicy cheese aged in wine lees, giving it a strong, distinctive taste.
- *Chloromanoura*: A fresh version of Manoura, milder and softer.
- *Xynomyzithra*: A tangy, creamy cheese that pairs perfectly with salads.
If you love sweets...
Sifnos will not disappoint! Biscuits and cookies, anise-flavored rings, fragrant tsoureki, baked and stovetop almond sweets, stuffed pastries with walnuts, loukoumia, and vanilla "submarine" sweet. Honeyed and aromatic pasteli. All made with pure local ingredients from the island’s traditional pastry shops and bakeries.
The wine of Sifnos
Sifnos is not widely known for its wine, unlike other Cycladic islands. Production is small and primarily done by individuals for personal consumption.
However, one unique wine produced in Sifnos is sun-dried red wine, which has an intense flavor and aroma due to its special production process.
